Missing summer? Yeah, me too. Roasted cherry tomatoes on the vine give you that July feeling - even if it's January. A great accompaniment to fish, chicken, beef, pasta or other roasted veggies. These are intense, salty & sweet. Simply delicious - and so easy!
1 lb cherry tomatoes on the vine
1 T olive oil
1/2 t sea salt
- Place tomatoes on a parchment lined baking sheet. Drizzle olive oil and sprinkle with salt.
- Roast for 20-25 minutes in a 400 degree oven.
